Vegetable Cake Recipe

This is a recipe I've come up with on consultation with two excellent sources- Aunty Ngaire (via Aunty Julie)'s Carrot Cake recipe and Jude Blereau's recipe.

By the way, Jude Blereau's books are excellent. I own 'Wholefood for the Family' and have the other two out from the library at the moment. They all contain alot of the same basic information, but the recipes vary. You probably don't need to own them all, but I definitely want to add 'Wholefood for Children' to my bookshelf.

Vegetable Cake Recipe

1C Wholemeal Flour
1C White Flour
2 1/2 t Baking Powder
1 C Raw Sugar (You might like to use 1 1/2 if you don't plan on having icing)
1/2 C Coconut
1/2 C Raisins
1/2 C Mixed Seeds, e.g. Linseed, Pumpkin, Sunflower...
2t Cinnamon
1/2 C Oil (I use Almond in baking)
3 Eggs
3 C grated Fruit and/or Vege (I've used Carrot and Zucchini, and Carrot and Apple)
1 T Vanilla Essence
1/2 C Dairy e.g. milk, thin yoghurt, buttermilk etc.

Preheat the oven to 180C. Mix dry ingredients in a large bowl and make a well in the middle. Add the wet ingredients to the well then mix until combined.

Makes 12 muffins or one cake.

Bake for 60 minutes or until a skewer comes out clean. Ice with Cream Cheese icing and decorate with walnuts and apricots if you have people coming for morning tea.

  1. This recipe is intrigueing. I've finally started looking for alternatives to sugar laden baking and have even tried sweetening my bread with honey. I'm going to put Wholefood for Children on my Book Depository wishlist, curse my understocked library!
